If you're sensitive to it, then the best way to neutralize it is to add dairy products to the pineapple juice. For example if you are mixing a pineapple juice cocktail, simply add in coconut milk, sweetened condensed milk, or regular 2% milk. The taste of milk or dairy products such as ice cream goes great with pineapple juice, and the proteins within the dairy products will bind with the acid in the pineapple juice, and neutralize much of it. If you are lactose intolerant, then simply dilute your pineapple juice with another beverage such as cola, soda, or even mineral water, which will also lower the acidity level.
