Pineapple Salsa with Lemon
Ingredients:
2 Cups of Chopped Pineapple
1 Cup of Chopped Onions
1 Cup of Fresh or Frozen Corn
1 Cup of Black Beans
1 Cup of Red Bell Peppers
3 Diced Jalapenos
1/4 Cup of Lemon Juice
1/4 Cup of Cilantro
1/2 Teaspoon of Ground Garlic
1/4 Teaspoon of Salt
1/4 Teaspoon of Sugar
1/4 Teaspoon of Ground Pepper
1 Teaspoon of Virgin Olive Oil
Serving Size:
Produces 6 Servings
Instructions:
Add all of the ingredients into a mixing bowl, and stir. The salsa can be chilled in the refrigerator, or served instantly. This salsa can compliment a large variety of dishes, so don't be shy about getting creative. The salsa can also be served as a side dish, and eaten alone.
Hot Pineapple Salsa with Tomatoes
Ingredients:
2 Cups of Chopped Pineapple
1 Cup of Chopped Tomatoes
1 Cup of Fresh or Frozen Corn
1 Cup of Chopped Onions
1 Cup of Black Beans
2 Diced Green Peppers
1/4 Cup of Lime Juice
1/4 Cup of Cilantro
1/2 Teaspoon of Ground Garlic
1/4 Teaspoon of Salt
1/4 Teaspoon of Chile Powder
1/4 Teaspoon of Ground Pepper
1 Teaspoon of Virgin Olive Oil
Serving Size:
Produces 6 Servings
Instructions:
Mix all of the ingredients in a large mixing bowl thoroughly to evenly disperse the peppers and hot chile powder. This can be chilled or served instantly. For an appetizer, try adding the salsa on top of fresh bread, and toasting it in the oven. It also
tastes excellent on top of a warm quesadilla.
